What Makes These Baking Mixes Different
Most protein baking mixes lean on whey and wheat flour, which rules them out for anyone avoiding dairy or gluten. Macro Mike went the other way, building every mix on plant protein – Californian almond protein, faba bean protein and rice protein – with rice and tapioca flour as the base. The result bakes and browns like a normal mix, but lands with real protein per serve and without the dairy that leaves a lot of people bloated.
Sweetening is handled naturally too. Coconut nectar, monk fruit extract and stevia carry the flavour instead of refined sugar, and guar gum keeps the texture soft rather than dry and crumbly – the usual downfall of high-protein baking. Every mix carries the same short, readable ingredients list, and the chocolate flavours use dairy-free choc chips made from cocoa liquor, raw sugar and cocoa butter.
Choosing Your Flavour
Protein Pancake Baking Mix
Available in Original and Double Choc Chip. Made with almond and rice protein, each 62.5 g serve makes 3–4 pancakes at around 10 cm across and delivers over 17 g of protein. Egg free and ready in 10–15 minutes, with four serves per bag.
Protein Banana Bread Baking Mix
Available in Original and Chocolate Chip. Built on almond and faba bean protein with coconut milk powder and cinnamon, each 25 g serve carries around 95 calories and 6.8–7.5 g of protein. Add plant milk and a mashed banana, bake, then slice the loaf into 10 pieces.
Double Choc Chip Protein Brownie Baking Mix
A faba bean protein base with cocoa, raw cacao and dairy-free choc chips. At roughly 87 calories and over 6.5 g of protein per serve, it's the lightest mix in the range – and the only formula made without almonds, which makes it the pick for anyone steering clear of nuts. Bakes in 15–20 minutes and cuts into 10 brownies.
Choc Chip Cinnamon Churros Protein Donut Baking Mix
Almond and faba bean protein with cinnamon, Himalayan pink salt and dairy-free choc chips, for a baked donut that eats like a churro. Around 94 calories and over 6 g of protein per serve, with 10 serves per bag and a 10–15 minute bake.
Nutritional values are based on the dry mix and will vary depending on your choice of plant milk and, for the banana bread mixes, the banana you add.
How To Use
Pancakes: Add 62.5 g of mix (a quarter of the packet) to a bowl with 70–85 ml of plant milk and stir thoroughly with a silicone spatula. Let the batter sit for a few minutes. Lightly oil a non-stick pan over medium heat, spoon out 3–4 pancakes roughly 10 cm across, and cook for 30–60 seconds each side until bubbles form and the pancakes are golden.
Banana bread: Preheat a fan-forced oven to 200 °C. Pour the mix into a large bowl and slowly add 240–250 ml of plant milk, stirring as you go. Mash 50–70 g of banana separately, then fold it through. Transfer to a lined loaf tin and bake for 20–30 minutes, until cooked through and golden on top. Cool on a wire rack and slice into 10.
Brownies: Preheat a fan-forced oven to 200 °C. Slowly add 250–280 ml of plant milk to the mix and stir until smooth. Pour into a lined brownie tray and bake for 15–20 minutes. Cool, then slice into 10.
Donuts: Preheat a fan-forced oven to 200 °C. Slowly add 180–200 ml of plant milk and mix well. Spoon into an oiled or lined donut tray and bake for 10–15 minutes. Allow to cool before popping them out.
Bakes keep in an airtight container in the fridge for 3–5 days, or freeze them for later. Stir through extra choc chips, nuts or anything else you fancy before baking.
Stacks Well With
Macro Mike Powdered Peanut Butter thins down into a frosting for the brownies and banana bread, or a drizzle over a stack of pancakes. For a bigger protein hit, blend a scoop of Macro Mike Premium Almond Protein straight into the pancake batter before cooking.
Servings: 10 per bag (banana bread, brownie and donut mixes) | 4 per bag (pancake mixes)
